01 / ICE CREAM
Creaminess & Structure
Explore texture and body development when adjusting sugar and fat in traditional ice cream formulations.
APPLICATION
Ice Cream · Frozen Yogurt · Sorbet
FEATURED INGREDIENT
Olifructine™ AFS
DEVELOPMENT PRIORITIES
Creaminess · Stability · Fibre
THE DEVELOPMENT CHALLENGE
Frozen desserts demand a carefully balanced combination of sweetness, fat, water, solids and air. Each component contributes to the final sensory experience.
Reducing sugar or fat can modify freezing behaviour, body, ice crystal formation, creaminess and melting characteristics. Reformulation therefore requires more than replacing one ingredient with another.
Organic agave fructans can be investigated as part of a formulation strategy designed to balance nutritional objectives with the desired texture and mouthfeel.
FORMULATION SCIENCE
01
Developing smooth, desirable mouthfeel through a balanced formulation.
02
Managing body and texture as sugar, fat and solids are adjusted.
03
Evaluating ice crystal behaviour, frozen texture and storage performance.
04
Exploring fibre enrichment alongside sugar and fat reformulation objectives.
UNDERSTANDING FROZEN STRUCTURE
The glass transition temperature (Tg) is one of the scientific parameters relevant to the behaviour of the unfrozen phase in frozen foods.
Changes in sugar, water and solids can influence frozen structure and storage stability. Understanding these relationships is important when developing reduced-sugar or reduced-fat frozen desserts.
The official Olifructine™ Frozen Desserts brief identifies agave fructans as a potential formulation tool for maintaining desirable texture while adjusting sugar and fat. Product-specific testing is required.
THE SCIENCE OF TEXTURE
Tg
Glass transition temperature: one parameter used to study the physical behaviour of frozen food systems.
Relevant to sensory texture and storage performance.
Evaluated together with formulation composition, air incorporation and structure.
APPLICATION DEVELOPMENT / 2025 TECHNICAL BRIEF
The following examples are drawn from NutriAgaves Group's Frozen Desserts technical brief. They illustrate formulation targets that may be investigated with Olifructine™ AFS.
| Product | Sugar / Carb Reduction | Fat Reduction |
|---|---|---|
| Ice Cream | 15% | 35–50% |
| Frozen Yogurt | 50% | 50% |
| Sorbet | 15% | Not specified |
2–7%
FRUCTAN ADDITION
Overall fructan addition range shown in the official formulation examples. Individual dosage must be assessed for the selected product matrix, ingredient grade and target properties.
